Baked Strawberry Glazed Donuts

Ingredients

Donut Dough

  • 1/4 cup milk
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 3 tablespoons coconut oil or vegetable oil
  • 1 cup flour
  • 1 teaspoon baking powder
  • dash of salt
  • 1/2 cup semi-crushed freeze dried strawberries

Glaze

  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1/3 cup strawberry powder (made by crushing freeze dried fruit until it's a fine powder)

Directions

Donut Dough
Step 1
Preheat oven to 450 degrees F. Grease a donut pan or muffin tin. Mix the milk, vinegar, vanilla extract, maple syrup and oil in a bowl. Set aside.
Step 2
Mix the flour, salt and baking powder.
Step 3
Pour the wet into the dry ingredients until just mixed. Add the crushed freeze dried strawberries.
Step 4
Scoop dough into pan. If you're using a muffin tin, either place balls of tin foil in the center of the dough or scoop out the centers with a small spoon. You can also punch a hole in the middle when they are done baking and cooled.
Step 5
Bake for 9 to 12 minutes or until the dough isn't sticky. Let them cool completely before adding the glaze.
Glaze
Step 6
To make the glaze, heat up the milk and vanilla over medium heat in a sauce pan. Once combined, add the powdered sugar 1/2 cup at a time. Whisk until smooth, then add the freeze dried strawberry powder.
Step 7
Before the glaze cools down, dip in the tops of the donuts. Let dry for 30 seconds. Enjoy!
