Easy Cheesy Broccoli Casserole

Broccoli and Velveeta topped with crackers; it doesn’t get much easier than this!  A favorite among kids and adults.

This recipe is so quick and easy to make; made with Harvester Farms freeze-dried Broccoli so their is no washing and no slicing!

Quick and easy broccoli and cheese bake made with Velveeta and Harvester Farms Freeze-Dried Broccoli


  • 3.75 cups Freeze Dried Broccoli (rehydrated and drained)
  • 12oz VELVEETA® (cut into 1/2-inch cubes)
  • RITZ Crackers (coarsely crushed)
  • 1/4 cup Butter or margarine (melted)


Step 1
Preheat oven to 350 degrees. Rehydrate the freeze-dried broccoli by placing the broccoli in a colander under running water for 30 seconds. Let drain.
Step 2
Place rehydrated broccoli and cut up cheese in mixing bowl. Place bowl in the microwave for 2 mins; heat until cheese is melted. Mix the cheese and broccoli together
Step 3
Melt the stick of butter in microwave
Step 4
Crush crackers coarsely; place them on top of the freeze dried broccoli and cheese. Pour the melted butter over the crackers
Step 5
Bake in oven for 45 minuets
