Peach Sorbet

Peaches and summer just go together - but fresh peaches don't last all that long! Consider this great peach sorbet made from freeze dried peaches. Freeze dried fruit stores well and tastes outstanding!
Ingredients
- 1 - 1.5 cup Raw Honey
- 1 cup Hot Water
- 1 cup Coconut Milk (Full fat, in can)
- 4 bags Brothers All Natural Freeze Dried Peach
- 1 Zest Lemon (Take the juice from the lemon, too!)
Directions
Step 1 | |
Make a simple syrup by combining the honey with hot water. | |
Step 2 | |
Stir until the honey completely dissolves. | |
Step 3 | |
Allow this to cool. | |
Step 4 | |
Combine peaches, coconut milk, honey mixture and lemon in blender or food processor, and process until smooth. | |
Step 5 | |
Pour the peach puree onto a parchment-lined cookie sheet and freeze until set. | |
Step 6 | |
Break the frozen puree into pieces and blend again in the food processor (you might have to do this in small batches, depending on your equipment). | |
Step 7 | |
Pour back onto parchment lined cookie sheet and freeze again. | |
Step 8 | |
Blend a final time. | |
Step 9 | |
Serve immediately or pour into an ice cube tray to mold into squares and save in the freezer for up to a week. Consider a garnish of fresh mint leaves, if you wish. |
