  • 1/2 can Harvester Farms Potatoes
  • 2 cans Cream of Celery Soup
  • 1 cup Greek Yogurt
  • 1/4 cup Chopped onion
  • 1 heaped teaspoon Bell Pepper Chopped
  • 2 cups Shredded Cheddar Cheese


  • 1 1/2 cup Crushed Corn Flakes
  • 2 tablespoons Butter or Margine melted


Step 1
Preheat oven to 350 degrees. Rehydrate the freeze-dried potatoes by placing the potatoes in a colander under running water for 30 seconds. Let drain.
Step 2
Chop one whole Bell pepper and 1/4 cup of an onion and add to a large mixing bowl
Step 3
Add the potatoes,yogurt and soup to the bowl with the peppers and onions. Mix well. Add the 2 cups of cheese and mix.
Step 4
Spray 2 quart baking dish with non stick cooking spray. Spread into baking dish
Step 5
In a plastic bowl coarsely crush corn flakes. Melt the butter in the microwave
Step 6
Spread evenly the crushed corn flakes on top of the potato mixture. Pour the melted butter over the corn flakes
Step 7
Bake in oven for 45 minuets
