Ingredients
- 1/2 can Harvester Farms Potatoes
- 2 cans Cream of Celery Soup
- 1 cup Greek Yogurt
- 1/4 cup Chopped onion
- 1 heaped teaspoon Bell Pepper Chopped
- 2 cups Shredded Cheddar Cheese
Topping
- 1 1/2 cup Crushed Corn Flakes
- 2 tablespoons Butter or Margine melted

Preheat oven to 350 degrees. Rehydrate the freeze-dried potatoes by placing the potatoes in a colander under running water for 30 seconds. Let drain. | |

Chop one whole Bell pepper and 1/4 cup of an onion and add to a large mixing bowl | |

Add the potatoes,yogurt and soup to the bowl with the peppers and onions. Mix well. Add the 2 cups of cheese and mix. | |

Spray 2 quart baking dish with non stick cooking spray. Spread into baking dish | |

In a plastic bowl coarsely crush corn flakes. Melt the butter in the microwave | |

Spread evenly the crushed corn flakes on top of the potato mixture. Pour the melted butter over the corn flakes | |
