Banana Chocolate Chip Cookies

Ingredients

  • 3/4 cups packed brown sugar
  • 3/4 cups granulated sugar
  • 1 stick unsalted butter (room temperature)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 1/4 cups flour
  • 3/4 cups freeze dried bananas (lightly crushed)
  • 1 cup chocolate chips (semi-sweet, dark chocolate, white chocolate or milk all work great)

Directions

Step 1
Preheat oven to 375 degrees F.
Step 2
Add both types of sugar into a stand-up mixer and mix on low until combined. Add the butter and mix well. Drop the eggs in, mixing in one at a time, and add the vanilla.
Step 3
In another bowl, mix the baking soda, salt and flour. Add this into the wet mixture in small portions, making sure to scrap the sides after each mix. Lastly, fold in the freeze dried bananas along with the chocolate chips.
Step 4
Prepare a greased or parchment covered baking tray. Drop the dough onto the sheet, leaving room in between (1-1.5 inches). Bake for 9-12 minutes or until the edges are brown.
Step 5
Cool cookies for a few minutes on the baking tray, then transfer to a wire wrack. Enjoy!
